If you are thinking of what to make for dinner tonight, try these zucchini boats! I found this recipe while reading one of the health magazines in Barnes and Noble:
I made this dinner last night and it was a veggie filled night. I snacked before dinner on half a left-over DQ blizzard from the weekend. Completely ruined my appetite. Anyway, these boats are very simple and can be filled with whatever you like. Next time, I might try to put in the mix tofu for added protein! First,
- Slice zucchini in half.
- Scrape out the inside of the zucchini, set aside to use for later.
- Drizzle with oil.
- Grill/bake zucchini until tender, ten minutes or so.
- Mean while, mix in a bowl: tomato, garlic, basil, set aside zucchini, goat cheese.
- Fill boats with mixture and grill for another 5 min or until cheese begins to melt.
I had a bit of the zucchini mixture left over and sprinkled that on top of my salad. Also, we grilled corn. Do you grill your corn with the husks still on? It peels so much better that way! Try it.
