So, I have an “ehhh” feeling when I eat tofu, unless it is prepped by someone else. I make it and think, dang, I’m not all that impressed. Well, I decided I needed to add some sort of coating to the tofu, because I figured it would help with the interesting consistency tofu has. Also, I needed to cut the slices smaller, again helping with the consistency. I am not a texture kind of person, but tofu is quite soft when you eat it. I would like for the tofu to be a bit more crunchy or solid when I eat it. I have to say my planned tactics worked out pretty well tonight. This is what I came up with:
Wasn’t too shabby, I just might say. I grilled the romaine lettuce, which was drizzled with olive oil, garlic and sea salt. It was still crunchy when it came off the grill which was exactly what I was hoping for. The vegetables were grilled, obviously. Lastly, the tofu was sliced thin and dipped in cornmeal and then grilled as well. Dinner was oh.so.perfect.
