Thai shrimp & tofu noodles

These tofu noodles are just the ticket. They have a small amount of carbs, which is great for Joe,; he loves them, and they taste great. It’s an over all win situation. All I do is win…WIN..WIN and if you’re goin in, put your hands in the air, make ’em stay there!

Dinner was fast and simple and just the way I like it on a busy day. I picked up this jar of Thai Kitchen Red Curry Simmer in 10 Minutes sauce because I had a vision it would be great to throw over fresh veggies and sauteed shrimp.

When the shrimp and sauce were nice and lightly sautéed, I threw it over the tofu noodles.

Sorry this picture isn’t all that great. I took it from my phone because my camera was on Athena overload.  The salad had chopped up beets with a garlic and herb goat cheese. There is something about beets and goat cheese that go together like Tom & Jerry. If you haven’t delved into his combo, what are you waiting for?
