fresh frittata

In the mix:

1 egg, 2 egg whites beaten

spinach

mozzarella cheese

fresh diced tomatoes

mushrooms

Directions:

  1. Beat eggs together in bowl, pour in hot greased skillet
  2. Don’t touch eggs the rest of the time
  3. Let cook or 2 to 3 minutes or until egg starts to harden
  4. Sprinkle fixings on top
  5. Place lid over skillet
  6. Let cook for 5 to 7 more minutes or until cheese is melted
  7. Carefully slid out of skillet and ENJOY!

*Hard to see the egg because of the white plate, sorry!
