Then, I spread the pesto over a pita and made pesto, ricotta and mozzarella cheese pita pizza! It was delicious and was made lickity split.
Broccoli pesto included (didn’t measure it out, sorry)
- left-over cooked broccoli
- parmesan cheese
- olive oil
- pine nuts
- minced garlic
- squeeze of lemon
Put all ingredients in a food processor and blend away! If you think the pesto is too thick, add olive oil. If the pesto is too nutty, add more cheese. Making pesto is very flexible and is easy to alter.
Now I am thinking of all the things to put broccoli pesto on! Breakfast sandwich: pesto, egg and feta cheese. Yes, please. Also, my mind is turning with all the other green things I can use to make pesto. Maybe spinach is next!
