Warm Spinach Salad

I was looking on Eating Well’s website and found a “Hearty Kale Salad” and became inspired.

Warm Spinach Salad


  • 2 cups spinach
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • 1 plum tomato chopped
  • 1 hard boiled egg


  1. Sautee spinach and garlic in olive oil until wilted (doesn’t take long!)
  2. Add chopped tomatoes until warmed.
  3. Plate spinach and tomatoes.
  4. Crumble hard-boiled egg over spinach, drizzle with *dressing of choice and ENJOY!

*Creamy Sweet Mustard Vinaigrette


  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp Dijon mustard
  • 1 1/2 tsp brown sugar
  • 1 tsp half and half
  • salt and pepper to taste
