Stuffed Peppers

Sometimes you feel like a stuffed pepper in your jeans after they come out of the dryer. Other times, you want to eat a stuffed pepper.

Joe loved these last night and I will share with you how to make these stuffed peps!

Start with 1 package of spinach, in a saute pan, with a dash of olive oil on medium heat.

Once the spinach has wilted, add 4 ounces of cream cheese.

In another pot, cook 1 cup quinoa according to directions on package.

Add quinoa to the spinach cheese mixture and stir well to combine.

Stuff 2 peppers, your choice of color, with cheesy spinach and quinoa mixture and bake in the oven for 20 minutes at 350F or until peppers are tender.

*I put mine in the toaster oven, so I didn’t have to use my big oven and it worked perfectly! They were “stuffed” in there a bit, but they just resembled their name!

    I am a fellow blogger and thought you should know that both of us and some others are victims of a blog site who is stealing our material. If you google the first line of your stuffed peppers post, you will see what I mean. They are not a WordPressdotcom site so there is nothing WordPress can do about it. They do seem to be a GoDaddy hosted site, so perhaps if we all write to GoDaddy they will be shut down. WordPress does have some helpful strategies on writing to a webhost to report Content theft. Search for that in their help files.
