Sometimes you feel like a stuffed pepper in your jeans after they come out of the dryer. Other times, you want to eat a stuffed pepper.
Joe loved these last night and I will share with you how to make these stuffed peps!
Start with 1 package of spinach, in a saute pan, with a dash of olive oil on medium heat.
Once the spinach has wilted, add 4 ounces of cream cheese.
In another pot, cook 1 cup quinoa according to directions on package.
Add quinoa to the spinach cheese mixture and stir well to combine.
Stuff 2 peppers, your choice of color, with cheesy spinach and quinoa mixture and bake in the oven for 20 minutes at 350F or until peppers are tender.
*I put mine in the toaster oven, so I didn’t have to use my big oven and it worked perfectly! They were “stuffed” in there a bit, but they just resembled their name!
