On medium heat, mix 1 package mushrooms, collard greens (used 2 large stalks, stems removed), 1/2 cup vegetable broth, 1/4 cup water, 2 cloves garlic minced.
Boil 1/2 cup couscous for 5 minutes or until softened. Also grate 1/2 cup cheese of choice (I used New York Extra Sharp).
Once collards and mushrooms have simmered until wilted, add 1 cup cannellini beans, 1/4 cup cream and 1 1/2 tsp whole wheat flour.
Allow mixture to thicken. Transfer couscous to casserole dish, pour collard mixture over top and finish off with cheese.
Bake 10 minutes at 350F or until cheese is melted.
