That is snow ya’ll!! Right next to our breakfast. I got the idea of making little quiche from eatingwell.com. I made these for Joe and I to enjoy after the snow fall! Yay, do you have snow where you are?!
Ingredients include: leftover pinto beans, millet, goat cheese, spinach, egg, almond milk
Directions: Whisk together 2 eggs, 2 egg whites with 1/4 cup almond milk until frothy. Add 1/4 cup millet, handful of beans, goat cheese and spinach. Pour into greased muffin tin, making 6 mini quiche. Bake for 12 to 15 minutes at 350F or until golden brown on top. ENJOY!
