Cauliflower Mac N Cheese

I love mac n’ cheese but rarely eat it with Joe’s limited carb intake due to type 1 diabetes. I found this recipe on vegetarian times website and immediately had to make it.

I love, love, love the crunchy darkened brown parts of the mac n’ cheese! Ah, look at them there!


  • 1 head cauliflower chopped (about 6 to 8 cups)
  • 1 cup vegetable stock
  • 2 Tbsp butter
  • 3 Tbsp flour
  • 1 1/2 cup reduced fat milk
  • 2 egg yolks
  • 1/2 cup nutritional yeast
  • sprinkle of panko bread crumbs
  • 2 cups extra sharp cheese, grated
  • 1 clove garlic, minced


  1. Boil chopped cauliflower for 7 minutes or until softened. Drain and set aside.
  2. In 5 quart pot, on medium heat, melt butter.
  3. Add flour and whisk well.
  4. Immediately, add stock, milk, garlic and stir constantly, allow to thicken – takes 10 minutes
  5. Take off heat, add cheese, nutritional yeast, egg yolks, mix well.
  6. Add cauliflower and coat with mixture.
  7. Grease 13 x 9 dish or two smaller dishes and pour cauliflower mac n’ cheese into pan.
  8. Sprinkle with bread crumbs.
  9. Bake 30 minutes at 350F. Turn up to 400F and for 10 more minutes let top brown.
