make it a mexican night!

 Oh la la, I love Mexican!

When I go for Mexican, it can be dangerous! I could eat a whole basket of chips and queso no problem. Well, the whole idea in life is moderation. I don’t have any in this case. Same goes for Dairy Queen…that’s another story! Anyway, I decided to do a Mexican casserole bake. It was delicious and took 5 minutes to prep!

Ingredients:

  • 2 whole wheat tortillas
  • 1/2 can vegetarian refried beans
  • 1/2 can organic black beans, rinsed
  • 1/2 cup cooked millet (or rice)
  • 1/2 cup salsa
  • 1 cup taco blend cheese

Directions:

  1. Place tortillas on bottom of pan to beginning layering ingredients.
  2. Spread refried beans on top of tortillas.
  3. Follow layering of ingredients from above, black beans, millet, salsa, and cheese.
  4. Bake at 350F for 15 minutes or until cheese is melted and warmed.
  5. Serve with sour cream and ENJOY!
