eggsalad pumped up

Do you love eggsalad but sometimes feel like it needs more than just egg in it? Well I found the answer…

garbanzo beans!


2 hard boiled eggs

1/4 cup plain Greek yogurt

1Tbsp Dijon creamy mustard

1/2 cup garbanzo beans

1/2 tsp curry powder

salt & pep to taste


  1. Mix together all ingredients except beans.
  2. Fold beans into mixture, gently coating with rest of ingredients.
  3. Enjoy on homemade crescent roll!
