filled up zucchini

I made zucchini boats back in the day (not really, but it was a few months ago). This recipe now includes four ingredients. Yes, four! For all you lovers of simple, this is it…


  • zucchini
  • pasta sauce
  • tofu (could use tempeh, ground beef)
  • mozzarella cheese


  1. Cut zucchini in half lengthwise. Scoop out flesh of zucchini.
  2. Drizzle with olive oil, bake at 350F for 5 minutes to soften.
  3. Meanwhile, cook tofu until browned on all sides in olive oil.
  4. Mix tofu with pasta sauce.
  5. Stuff zucchini with tofu mixture.
  6. Sprinkle with cheese.
  7. Bake for 15 minutes at 350F.
  8. ENJOY!

  1. Mmmm I would sub the tofu for chunks of fresh mozzarella. I love the idea tho. So yummy!
