Sweet Potato Pancakes

My cousin talked about sweet potato pancakes she got a few weekends ago and made me think of how I needed to make them. I totally winged the recipe and it still worked out to my benefit. They were delicious. Joe was totally suspicious of these and once he took of them it was all over…

Ingredients:

  • 1 small sweet potato
  • 1 Tbsp coconut milk
  • 1/4 cup flour
  • 1 egg white
  • 1/4 cup almond milk
  • 1 tsp brown sugar
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla
  • sprinkle of cinnamon
  • crushed almonds, powdered sugar and agave as toppings

Directions

  1. Bake sweet potato at 350F for 20 minutes or until softened. Peel skin and puree with coconut milk until smooth.
  2. Mix rest of ingredients with potato puree.
  3. Butter skillet, put on medium heat, let pancakes bubble then flip.
  4. Chop almonds, sprinkle on top with powdered sugar and agave.
