butternut squash wheatberries

I’m so sorry I don’t have a Valentine’s day recipe to share with you. I made lemon donuts over the weekend and they definitely hit our sweet tooth. Also, since Joe eats sugar in extreme moderation, it would be me housing the sweet goods if I made them. Not a bad idea, but not the healthiest one either! So instead, I give you a simple recipe to make for dinner!

Butternut Squash Wheatberries

Ingredients:

  • 3/4 cup cooked wheatberries
  • 1 cup cooked butternut squash
  • 1/2 can light coconut milk
  • sprinkle nutmeg & cinnamon
  • sprinkle goat cheese

Directions

  1.  Puree squash, coconut milk and spices together until smooth.
  2. Mix with wheatberries.
  3. Sprinkle with goat cheese and ENJOY!

  1. Goat cheese and butternut squash are both favorites of mine, I have never seen them together before. Yumm! So seasonal and perfect for the weather.
