lemon rounds

Lemon Rounds

Adapted:Vegetarian Times


  • 1 stick butter, softened
  • 1/2 cup sugar
  • 1 tsp grated lemon zest
  • 2 egg yolks
  • 1 cup flour
  • 1/3 cup corn flour
  • 1 tsp lemon extract
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt


  1. Cream together butter and sugar with electric hand mixer.
  2. Add egg yolks, lemon zest and lemon extract.
  3. In another bowl, mix together flours, baking powder and salt.
  4. Add flour mixture to butter mixture and combine.
  5. Shape batter into 2 logs using wax paper (I thought this was tricky!)
  6. Refrigerate for 30 minutes.
  7. Cut into rounds and bake at 325F for 15 minutes.
  8. Sprinkle with turbinado sugar once cookies are cooled. ENJOY!
