coconut oats

Do you use half a can of coconut milk for dinner and have no idea what to do with the rest of it?

Well, use it in your oatmeal and then you won’t waste a drop! They turn out so thick and creamy dreamy when you do. You could make over night oats or hot oatmeal, it’s your choice. I did the over night oats with coconut milk this time and it was yum yum.

Ingredients:

  • 1/2 cup oats
  • 1/4 cup to 1/2 cup coconut milk (depends on how milky you like them)
  • sprinkle flax seeds
  • sprinkle blueberries
  • dollop dark chocolate peanut butter & regular peanut butter  (topping in the morning)
  • sprinkle unsweetened coconut shreds

Directions:

  1. Mix first 3 ingredients together in jar.
  2. Place in refrigerator.
  3. Top with blueberries, peanut butter (s) and coconut in the morning, ENJOY!
