Kale & ChicPea Shrooms

Dinner tonight consists of 4 simple ingredients: steamed kale, chic peas, mozzarella and portabella mushrooms. That’s it! I know hard working ladies out there like the five ingredient fix type dinners or the recipes that can be made in 30 minutes or less. This recipe will fit into BOTH categories.

Ingredients:

  • 1/2 bunch kale
  • 1 can chic peas
  • 2 portabella mushrooms
  • 1/2 package shredded mozzarella cheese
  • 1 Tbsp nutritional yeast (optional)

Directions:

  1. Remove stems and steam kale in water/vegetable stock and nutritional yeast until wilted.
  2. Mix in chic peas with kale, heat 1 minute.
  3. In oven, oil mushrooms and bake at 350F for 10 minutes to soften.
  4. Fill with kale and chic pea mixture.
  5. Top with cheese.
  6. Bake in oven for another 10 minutes or less until cheese is melted.
  7. ENJOY!
