Sweet Potato & Black Bean Burgers

Yes, it is the week of veggie burgers for me. I have made the cauliflower almond burgers and now these, oh and yeah don’t forget these! I think the sweet potato and the cauliflower ones are a close tie for my favorite veggie burgers so far. Joe said Oh an Ah a lot as he ate these. They were really, really good and they stayed together, which is sometimes hard when making veggie burgers!


  • 1 medium sweet potato, peeled and grated
  • 1/4 cup flour
  • 1/2 cup bread crumbs
  • 1/8 cup onions
  • 1/4 cup feta cheese (or cheese of choice)
  • 1 egg
  • 1 can black beans, rinsed
  • 2 garlic cloves, salt & pepper


  1. Mash together all ingredient with a hand-held potato masher (or fork). You should still see some whole bean pieces – don’t over mash.
  2. Heat on medium, olive oil in skillet, covering bottom of pan completely.
  3. Create patties with mixture and place in heated pan. Cook 5 minutes or until browned on each side.
  4. Only turn once! This will help the burgers stay together. Brown on both sides.
  5. ENJOY on a bun or over a bed of spinach!

  3. I am showing this recipe to my mom right now. She loves boca burgers on salad and for breakfast. I think this is a better and more fresh alternative!
