Granola Cups

Not sure about you, but I’m a sucker for granola bars. I like the Dark Chocolate and Coconut Kashi bars, the not as healthy ones that taste like Samoa Girl Scout cookies and many, many more. I figured making your own granola bars was just like making your own granola, so I got started! I found a recipe from Eating Well and whipped these up yesterday at 5 o’clock in the morning. Joe said, “I don’t know why you are doing this stuff in the morning? Are you crazy?” That’s his question to me A LOT!

Ingredients:

  • 1 cup oats
  • 1/4 cup chopped almonds
  • 1/4 cup sun flower seeds
  • 1 Tbsp flax seeds
  • 1 cup puffed cereal (used Kashi)
  • 1/3 cup dried cranberries
  • 1/4 cup almond butter
  • 1 Tbsp turbinado sugar
  • 1/2 cup honey
  • 1/2 tsp vanilla extract

Directions:

  1. Place oats, almonds, sun flower seeds and flax seeds on foil lined cookie tray and bake for 10 minutes at 350F. Toss mixture half way through.
  2. In small sauce pan, on medium heat, mix together almond butter, sugar, honey and vanilla until smooth, 3 minutes or so.
  3. Remove oat mixture from oven and mix cereal and cranberries all together in medium-sized bowl.
  4. Immediately pour almond butter mixture over oat mixture and coat thoroughly.
  5. Spray 8 inch pan or muffin tin with cooking spray.
  6. Fill pan or tin with mixture and press down with back of spoon.
  7. Refrigerate for 30 minutes, cut into bars or remove from muffin tin and ENJOY!!
