Stuffed Acorn Squash

If you have been reading befilledup for a bit now you know my love for things that you can stuff like stuffed mushrooms or stuffed tomatoes or even stuffed peppers. The reason I like stuffing things so much is because it allows you to combine many flavors into one dish. Welp, here’s a new thing to stuff…stuffed acorn squash!


  • 1 small acorn squash, cut in half seeds and membranes removed
  • 1 small yellow squash cut into small pieces
  • 1/2 cup grain of choice
  • Few Tbsp olive oil
  • Sprinkle mozzarella, feta, or goat cheese


  1. Bake acorn halves in oven on 350F for 30 minutes or until softened.
  2. Saute yellow squash with olive oil until lightly browned.
  3. Mix yellow squash with 1/4 cup pesto and grains.
  4. Fill acorn halves with squash and grain mixture.
  5. Bake for another 5 to 7 minutes.
  6. Sprinkle with cheese.
  7. ENJOY!
