Avocado Cups

Avocado is a favorite of mine when it is perfectly green and ripe.  The avocado has to be just right to eat and when you cut it open you will know when you scored a good one. I always feel or lightly squeeze  the avocado in the farmer’s market to the fullest extent. The Mennonites probably think I am way too into my avocados but it’s just how it is for me. Try this recipe with the perfect avocados and you will be you did! I didn’t measure the ingredients for this recipe but this is what was involved…

Ingredients – avocado, grape tomatoes, cucumber, mozzarella cheese, fresh basil, minced garlic, balsamic vinegar, sprinkle of parmesan cheese (optional) and a dash of salt and pepper.

Directions – In a bowl mix together cubed avocado, chopped tomatoes, cucumber, cheese, basil and garlic. Heat balsamic vinegar in pan on medium heat until thickened – watch carefully. Drizzle thickened vinegar over ingredients. Fill empty avocado shells with ingredients, sprinkle with parmesan cheese and ENJOY!!

  2. Great idea to use the skins as cups as a holding vessel for this salad. Great minds think alike I just used my banana as the baking device for my banana mango boats. Take care, BAM
