Quinoa Cups

I’ve made layered salads in a mason jar before but this recipe was a bit different. I took a spin off this idea from Vegetarian Times Magazine. Who doesn’t love to see beautiful colors layered in a food dish? That’s what happened when making these quinoa cups. The colors popped right out of the jar and made you feel like summer was in full effect. Can’t beat that thought! Hands down, I am ready for the summer. I can’t wait to lay by the pool, drink a few cocktails and have a bronze tan. Who’s in?


  • 2 to 3 Tbsp olive oil
  • 1 clove garlic, minced
  • 3/4 cup peas
  • 1 avocado
  • 1 lime, cut in quarters
  • 1/2 cup cooked quinoa
  • 1 can “salad blend” beans, rinsed and drained
  • few Tbsp fresh cilantro, chopped
  • 1/2 to 3/4 cup grape tomatoes, halved


  1. In mini food processor, blend together olive oil, peas and garlic, until well combined. Set aside.
  2. In small bowl, mix avocado cubes, 1/4 of lime and cilantro.
  3. In mason jar (or other clear, tall glass) layer cooked quinoa, pea mix, beans, avocado mix, tomatoes and dash of salt and pepper.
  4. Sprinkle top of each jar with more lime and ENJOY!
