Vegan BBQ Sandwiches

I had a light bulb go on in my head about bbq sandwiches this week. Instead of using meat, use tempeh! It worked so well and tasted delicious and I know because Joe loved it and took the leftovers to work the next day!  I was oh.so.excited!

Ingredients:

  • 1 package tempeh, crumbled
  • 1/2 onion, diced
  • 1 to 2 Tbsp olive oil
  • 1 cup ketchup
  • 1/2 cup water
  • 1/4 cup apple cider vinegar
  • 3 Tbsp light brown sugar
  • 1 Tbsp sugar
  • 1/2 tsp onion powder
  • 1 tsp ground mustard
  • 1/4 of lemon, juiced
  • 1 tsp Worcestershire sauce

Directions:

  1. Place all sauce ingredients – ketchup through Worcestershire sauce in saucepan and bring to a boil.
  2. Once boiling, reduce and simmer for 45 minutes.
  3. In saute pan, place crumbled tempeh and diced onion in olive oil and brown.
  4. Once sauce is ready, pour into tempeh mixture – might not need all of sauce.
  5. Cook 2 minutes or until heated throughout.
  6. Stuff BBQ in pita pockets or buns and ENJOY!
