Vegetarian Meatloaf

I created a vegetarian meatloaf a bit ago on the blog. I loved the meatloaf and so did Joe! It was hearty, resembled the texture of regular ground beef, and held together like a gem. Only thing is, the pictures were just so-so. I was learning how to use the daylight to my advantage with my camera and the pictures really didn’t do the “meat” loaf any justice. Not only that, but I had a hankering for something hearty this week and wanted to make the vegetarian meatloaf again. I looked back at the recipe and figured, I could alter it a bit to what ingredients I had on hand. Instead of using bread crumbs for the loaf, I used oats and it was an awesome substitution. Instead of using walnuts, I had raw cashews on hand, and that was again, another awesome substitution.

Have you ever made a recipe that you made a second time around where you kinda wanted to be daring and mix it up a bit?

Creamy Pumpkin & Black Bean Soup

I was introduced to this perfect fall soup from my girlfriend, Maisie, who was introduced to it through her mom. I’m assuming her mom was introduced to it through Rachel Ray and the Food Network. It’s not one of those generation to generation recipes that is passed down along the family but it is tasty enough to pass it on to anyone you know who likes soup!

This creamy pumpkin soup is a-w-e-s-o-m-e, yes do a little cheer while making or eating this soup! This soup is perfect for someone who has limited time to make dinner and wants it done lick-ity split. It’s also perfect for anyone who loves eating pumpkin in the fall. I do, I do!

Secret Ingredient Stuffed Shells

If you are like Joe, you question what is in almost every dish we eat. “What’s that stuff there?” As he points to the tiniest speck of green. “That’s just a green onion, Joe.” Or sometimes he is the complete opposite and eats the entire thing in 3 bites with no questions and says how great it was and then asks, “What exactly was that?” That’s when I flap my arms and get excited to tell him it was something he always proclaims he doesn’t like! Yayyyy, it’s always another success in my book when that happens. Today the secret ingredient was tofu. I’m sure this is old news to stuff your shells with tofu, but it was a first for me and definitely a first for Joe. Great part about it, again he didn’t know they had anything but ricotta cheese in them.
