Chocolate PB Pretz Cookies

If you love chocolate, peanut butter and pretzels, you will love these cookies. My girlfriend, Tiffani, made them after pinning it to her “Sweets” Pinterest board. Ahhh, the greatness of Pinterest. After she made them at my house a few months back, they kinda slipped my mind. I don’t know how because they are that good and not only that but I probably had 4 of them (woops!)…but luckily I had a flashback and thought they would be great to make for New Year’s Eve. I made them yesterday and figure I will just freeze them and then take them out a few hours before the guests arrive. I did sneak one before stashing them away!

What’s your favorite combination for cookies?

I love anything peanut butter and chocolate. The salty pretzels are just an added bonus..who doesn’t love sweet and salty?

Mint Chocolate Chip Sandwiches

Here’s another sweet, but not too sweet dessert for you! I have been eyeing some chocolate wafers at the grocery store for a while now. Only thing, they are a bit expensive – about $5.00 for a little box. I always see them, stand there, and then walk away. I usually tell myself, “Next time, Lesley, next time.” Well last week at the grocery store, a similar chocolate wafer, to be exact a delicate Swedish cookie, was on sale for $2.99 and these cookies were mint chocolate wafers!!! I love mint chocolate. Love, love, love it.I also love the peppermint mocha iced coffee at Dunkin Donuts this time of year. Anyone else?! 

Well, this box of mint chocolate wafers was tossed faster into my cart than I could say, “Go!” Now, once I got them home, I quickly tore open the little box of joy and ate a few wafers as I pondered over what I was going to do with them. Of course I couldn’t just eat them as is. I had to do something else with them. That’s when I thought of making some peppermint whip cream and freezing them into little mint chocolate chip ice cream sandwiches. Perfect, right?! What makes them even more perfect are the green and red sprinkles along with some chocolate ones!

Chocolate sprinkles or jimmies (to some) bring me back to my childhood…Ah, to feel young again!

Lemony Blueberry Breakfast Cake

This cake is really something else. So much that Joe didn’t even realize there was lemon in it at first. He is someone who says he doesn’t really like lemon! Gotcha, jokes on you yet again, dude! This cake I found as I was pinning away on pinterest a few weeks ago. I kept saying, I’m going to make this, I’m going to make this, but then never got around to it. I think it was for the fear that Joe and I would eat the whole thing in one weekend…

Do you tend to not make things just because you know they won’t stand a chance in your house for more than 5 minutes?

Yeah, that’s kinda what happened with this breakfast cake.

I love how the word breakfast in front of cake makes you feel ok about eating cake for breakfast!

These little blue gems helped as well…It helped that they were buy one get one at the store this weekend, too!
